Snowballs

The epitome of a “Christmas Cookie Box” cookie. Unbelievably low effort, kid friendly, pretty tasty, customizable, and they look the part!

Yield: 20 Snowballs

IngredientsAmountNotes
Unsalted Butter227gRoom Temp
Powdered Sugar75g
Vanilla Paste10g2 tsp
Salt5g1 tsp
AP Flour320g
Hazelnuts (chopped)80gAny Nut/Seed/Dried Fruit..
Powdered SugarAs Needed

Procedure:

  1. You can do this with a wooden spoon, mixer, hands, whatever you’ve got. Add your butter, powdered sugar, and vanilla to a bowl and mix with with a rubber spatula or wooden spoon til smooth and combined (no dry spots).
  2. Add your flour, salt, and inclusion of choice. Now with your hands, I want you to gently mix everything around and squeeze it together with your hands. Grab and twist with your hands until everything comes together and you have cookie dough.
  3. You want these to be balls about the size of quarters, so scoop or portion 30 gram balls (2 tbsp) and roll them briefly with your hands to shape them more into balls.
  4. Place on a parchment lined and sprayed sheet tray, and freeze them for 1 hour. They will puff and increase in size about 30% or so once baked.
  5. Preheat your oven to 325⁰ Fahrenheit, and bake these for about 22-25 minutes, til the outsides are a lovely lady that golden color.
  6. Roll them after 10 minutes, while still warm, in powdered sugar.

Special Instructions / notes:

I’ve made these several different ways, with essentially every nut known to man, and nothing is as good as the hazelnut version.. although pistachio is a close second. Throw a little orange zest and some finely chopped chocolate in there with the Hazelnuts and I think you’ll blow some people’s socks off!
