| Eggs (large) | 3 + 1 yolk | |
| Granulated Sugar | 150g | |

| Cocoa Powder (Dutch) | 40g | |
| AP Flour | 120g | |
| Baking Powder | 1/2 tsp | |
| Salt | 1 tsp | |
| Vanilla | 2 tsp | |
| Semi-Sweet Chocolate Chips | 180g |
Procedure:
- Add a small amount of water to a medium sized pot and bring to a simmer. In a heat proof bowl that sits comfortably over the top of the pot, combine your dark chocolate, butter, and corn syrup.
- In a separate bowl, large enough to hold the rest of the ingredients, combine your eggs, vanilla, salt, and both sugars. Beat this by hand with a whisk (4 minutes) or with a hand mixer on medium/high (2 minutes) until voluminous.
- Once the chocolate mixture is silky smooth and melted, add your cocoa powder to this and set aside for 3 minutes. Then slowly add into your egg mixture, whisking continuously.
- Add the rest of the ingredients on top of the chocolate and egg mix, including the chocolate chips, and fold into the batter with a rubber spatula until evenly combined and there are no dry spots.
- Preheat your oven to 350 degrees Fahrenheit and line an 8 x 8 inch pan with parchment. I will still grease inside the parchment, but optional. Pour your batter into the pan and level it to the best of your ability.
- Bake for approximately 25 minutes. Remove and cool. For clean slices, refrigerate until completely chilled, or freeze for even cleaner slices.
Special Instructions / notes:
Something I did not mention the importance of, but would like to make known, is how pivotal it is that you whip as much air into those eggs as you possibly can. This is what creates that crispy layer on the very tops of the brownies and give them that signature look.
Use a high quality chocolate and cocoa powder for the best results. The clear flavor in brownies is decadent chocolate, so choose wisely.
If you want to bake this in a 13 x 9 inch pan, simply double the recipe, the bake time should be about the same. Do not use glass.
